These Sesame Ginger Peach & Tofu Skewers are the perfect recipe for avid vegan “braaiers”. Maximum taste with minimum effort.
Ingredients:
Marinade:
- ¼ cup dried peaches
- 2 tbsp tamari
- 6 tbsp olive oil
- 2 tbsp natural peanut butter
- ½ tsp ground ginger
- ½ tsp crushed garlic
- 1 tbsp lemon juice
- 1/3 cup water
Skewers:
- ¼ cup dried peaches cut in half
- 500g of firm tofu
- Wooden skewers
- 1 cup watercress
- 3 tbsp raw almonds/ walnuts
- 1 tbsp olive oil
- 1 tsp sesame seeds
Method:
Soak the peaches in a bowl of warm water for 1-2 hours.
Drain the peaches and blend with the remaining marinade ingredients in a high-speed blender. Add more water if the marinade seems too thick.
Cut the tofu into large equal-sized cubes and coat each cube in the marinade.
Cut the dried peaches in half and set aside.
Assemble the skewers by piercing one cube of tofu, then add a sliced peach, and repeat.
Bring a pan or skillet to high heat and add 1 tbsp coconut oil to coat the bottom of the pan.
Grill the skewers for 10-15min until the tofu starts to caramelize and form a light crust.
Serve warm on a simple watercress and rocket salad, with raw almonds and sesame seeds.
