Prepare this Pork Stir-Fry with Dried Apricots, Dried Figs and Brazil Nuts for a delicious lunch or light dinner for the whole family.

- ½ kg boneless pork
- 4 pieces of shiitake mushroom
- 1 zucchini
- 1 carrot
- 1 green pepper
- 8 dried apricots
- 8 dried figs
- 6 Brazil nuts (chopped)
- 8 tablespoons of olive oil
- pepper
- 2 tablespoons of soy sauce.
- Cut the vegetables and shiitake into long thin strips and stir-fry.
- Add the chicken, which you have fried previously in oil over high heat.
- Once everything has softened, add the dried apricots and the dried figs.
- Add the soy sauce, the pepper and the Brazil nuts.
- Cook for another 2 to 3 minutes before serving.
