Moroccan Chickpea Stew with Dried Nectarines: by The Green Dietician

Enjoy this easy, hearty winter warmer dish by our favourite vegan Dietician, The Green Dietician

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp olive oil
  • 1 chilli, deseeded
  • 1 tin tomato + onion mix
  • 3 cups veg stock
  • 2 tbsp harissa paste
  • 2 tins chickpeas, drained
  • 2 sweet potatoes, peeled + chopped
  • 1 tsp cinnamon
  • 6 pieces dried nectarines, diced
  • A handful of flaked almonds for topping
  • Couscous for serving

 

  1. Saute onions and garlic in olive oil until cooked.
  2. Put tinned tomatoes, chilli and harissa paste in your Nutribullet or blender and blend until smooth. 
  3. Pour pureed tomatoes into the pot and add remaining ingredients.
  4. Simmer on medium heat for 40 minutes or until sweet potatoes are cooked through.
  5. Sprinkle with flaked almonds.
