Dried Peach Oatmeal Cookies

Mamas – surprise your little ones with these delicious Dried Peach Oatmeal Cookies! They are easy to prep and filling enough to add to school lunchboxes.

2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1/4 tsp freshly ground nutmeg
1 cup butter, room temperature
2/3 cup sugar
2/3 cup brown sugar
2 large eggs
1 tsp vanilla extract
2 cups oatmeal
1 1/2 cups diced, dried peaches


  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt and nutmeg.
  3. In a large bowl, cream together butter and sugars until light and creamy.
  4. Blend in eggs one at a time, then add in the vanilla extract. Stir in the flour mixture, followed by the oatmeal.
  5. When all of the dry ingredients have been incorporated, stir in the dried peaches until evenly distributed in the batter.
  6. Shape cookie dough into 1-inch balls and arrange on prepared baking sheet, leaving at least 2 inches between cookies
  7. Bake for 11-14 minutes, or until the cookies are lightly browned at the edges and just set in the centre.
  8. Allow cookies to cool on the baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
