This is a salad that packs an energy-boosting punch! Containing many of the ingredients usually associated with energy and health cereal bars but without the grains. It will keep in the fridge easily for a couple of days, so you can make a big batch; in fact, you can use this salad as a topping for other salads. Or grab a few mouthfuls on-the-run for a satisfying energy boost.
Ingredients
- 6 medium-sized tomatoes
- ½ English cucumber
- ½ red onion, diced
- 1 punnet mixed sprouts (approx. 150 g)
- 100 g pecan nuts, roughly chopped
- 100 g seedless raisins
- 50 g shaved coconut
- 50 g sunflower seeds
- 50 g pumpkin seeds
- 50 g dried cranberries
Directions
- Slice tomatoes in half and remove pulp and seeds; turn cut side down to drain.
- De-seed the cucumber by cutting in half lengthways and removing seeds with the tip of a teaspoon.
- Slice cucumber into small dice.
- Dice tomatoes to a similar size as the cucumber.
- In a large bowl, mix together all ingredients. Serve.
