All-day energy salad with raisins

This is a salad that packs an energy-boosting punch! Containing many of the ingredients usually associated with energy and health cereal bars but without the grains. It will keep in the fridge easily for a couple of days, so you can make a big batch; in fact, you can use this salad as a topping for other salads. Or grab a few mouthfuls on-the-run for a satisfying energy boost.

Ingredients

  • 6 medium-sized tomatoes
  • ½ English cucumber
  • ½ red onion, diced
  • 1 punnet mixed sprouts (approx. 150 g)
  • 100 g pecan nuts, roughly chopped
  • 100 g seedless raisins
  • 50 g shaved coconut
  • 50 g sunflower seeds
  • 50 g pumpkin seeds
  • 50 g dried cranberries

Directions

  1. Slice tomatoes in half and remove pulp and seeds; turn cut side down to drain.
  2. De-seed the cucumber by cutting in half lengthways and removing seeds with the tip of a teaspoon.
  3. Slice cucumber into small dice.
  4. Dice tomatoes to a similar size as the cucumber.
  5. In a large bowl, mix together all ingredients. Serve.
